Spinach and Caramelized Onions Grilled Cheese



I think, grilled cheese is universally liked.  It has changed over the years.  When I was a kid, grilled cheese was a slice of American cheese with a slice of tomato, grilled.  It was delicious then but now it has taken on a new life.  Grilled cheese has many additions.  My favorite is avocado.  Although, after eating the caramelized onions and spinach on this one, I may have a new favorite.

I also think that people often think of tomato soup as an accompaniment to the sandwich but I tried potato soup and it was a yummy combination.


Ingredients

1 cup spinach leaves, cooked slightly




2 teaspoons olive oil

1 medium red onions, cut into 1/2-inch-thick slices

1/8 teaspoon freshly ground black pepper

4 slices gluten-free bread

Cooking spray

1/8 cup Parmesan cheese

4 slices spicy cheese

Method:

 Heat a skillet over medium-high heat. 


Add oil. 


Add onion and cook 10 minutes or until onion is tender and browned, stirring frequently. 


Heat a large nonstick skillet (I have an electric one and the shape is square so it accommodates the 4 sandwiches easily) over medium heat. 


Spray bottom of skillet.

Place bread down in skillet.

Sprinkle 1 tablespoon Parmesan on 1 bread slice in pan. 

Top with a few spinach leaves, some of the onion and a slice of cheese.

Top with other toasted bread slice. 

Cover will heavy pan and push down gently.

Cook on first side for about two minutes or until medium brown.

Turn each sandwich over and cook for another minute.

Remove from pan and serve.



Eat and enjoy.
